Ingredients

For the Fried Mushrooms

  • 1 cup buttermilk
  • 1 tsp garlic powder
  • ½ tsp paprika
  • 1 cup all-purpose flour
  • 1 cup breadcrumbs or panko
  • 1 lb mushrooms (button, cremini, or oyster), cleaned & stems trimmed
  • ½ cup cornstarch
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper (optional)
  • Vegetable oil (for frying)

For the Cool Ranch Dip

  • ½ cup mayonnaise
  • ½ cup sour cream or Greek yogurt
  • 1 tsp lemon juice or vinegar
  • ½ tsp dried dill
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp chopped fresh parsley or chives (optional)

Directions

  1. Prep Mushrooms: Clean mushrooms and trim stems if needed. Keep whole for juiciness.
  2. Soak: Mix buttermilk, garlic powder, paprika, salt, and pepper. Add mushrooms, coat well, and soak 30 minutes.
  3. Breading Station: In one bowl, mix flour and cornstarch. In another, combine breadcrumbs, salt, pepper, and cayenne.
  4. Coat Mushrooms: Dredge mushrooms in flour-cornstarch, dip back into buttermilk, then coat with breadcrumbs. Let sit 5 minutes.
  5. Fry: Heat oil to 350°F (175°C). Fry mushrooms in batches for 3–4 minutes until golden. Drain on paper towels and sprinkle with salt.
  6. Make Dip: Mix mayonnaise, sour cream, lemon juice, dill, garlic powder, onion powder, salt, and pepper. Stir in parsley or chives. Chill 15 minutes.
  7. Serve: Enjoy crispy mushrooms with cool ranch dip!
