- 4 boneless, skinless chicken breasts
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs

- 1 teaspoon onion powder
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
- 2 large eggs
- 1 tablespoon Dijon mustard
- 2 tablespoons olive oil

- Preheat: Set oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Mix coating: In a shallow dish, combine Parmesan, breadcrumbs, garlic powder, onion powder, Italian herbs, salt, and pepper.
