🧂 Ingredients

For the Tofu

  • 1 block extra-firm tofu, pressed & cubed
  • 1/4 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper

For the Teriyaki Sauce

  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 1 tbsp honey
  • 1 clove garlic, minced
  • 1/4 tsp sesame oil

For the Rice

  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1/4 tsp salt

For the Avocado

  • 1 avocado, sliced

👩‍🍳 Instructions

  1. Coat tofu: Mix cornstarch, flour, garlic powder, salt, and pepper. Toss tofu cubes until coated.
  2. Cook tofu: Heat oil in skillet over medium-high. Fry tofu until golden and crispy.
  3. Make sauce: Whisk soy sauce, rice vinegar, honey, garlic, and sesame oil together.
  4. Cook rice: Bring broth to boil. Add rice and salt. Cover and simmer 15–20 minutes until tender.
  5. Assemble: Layer rice, avocado slices, and crispy tofu in a bowl. Drizzle with teriyaki sauce.
  6. Serve: Enjoy immediately while warm.
