- 1 block extra-firm tofu, pressed & cubed
- 1/4 cup cornstarch
- 1/4 cup all-purpose flour
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
For the Teriyaki Sauce
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 1 tbsp honey
- 1 clove garlic, minced
- 1/4 tsp sesame oil
For the Rice
- 1 cup brown rice
- 2 cups vegetable broth
- 1/4 tsp salt
For the Avocado
- 1 avocado, sliced

- Coat tofu: Mix cornstarch, flour, garlic powder, salt, and pepper. Toss tofu cubes until coated.
- Cook tofu: Heat oil in skillet over medium-high. Fry tofu until golden and crispy.
- Make sauce: Whisk soy sauce, rice vinegar, honey, garlic, and sesame oil together.
- Cook rice: Bring broth to boil. Add rice and salt. Cover and simmer 15–20 minutes until tender.
