  • 1 can (425 g) diced tomatoes
  • 2 tbsp tomato paste
  • 2 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt & pepper to taste
  • 3 cups elbow macaroni (uncooked)
  • 2 cups shredded cheddar cheese
  • Optional garnish: chopped parsley or jalapeños

Instructions 👩‍🍳

  1. Brown beef: In a skillet, cook ground beef and onion until beef is browned. Drain excess fat.
  2. Load crockpot: Add beef mixture, beans, corn, tomatoes, tomato paste, garlic, broth, and spices to crockpot. Stir well.
  3. Cook: Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  4. Add pasta: Stir in macaroni during the last 30 minutes of cooking. Ensure pasta is submerged in liquid.
  5. Finish: Once pasta is tender, stir in cheddar cheese until melted and creamy.
