🌽🧀 Mexican Street Corn Fritters
Crunchy on the outside, cheesy on the inside—these fritters are the ultimate snack!
Ingredients
- 2 cups corn kernels (fresh, frozen, or canned, drained)
- 1/2 cup all-purpose flour
- 1/4 cup cornmeal
- 1 tsp baking powder
- 1/2 tsp chili powder
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup grated Cotija cheese
- 1/4 cup fresh cilantro, chopped
- 1 large egg
- 1/4 cup milk
- Vegetable oil, for frying
- Lime wedges, for serving
- Extra Cotija cheese, for garnish
Directions
- In a large bowl, mix corn, flour, cornmeal, baking powder, chili powder, garlic powder, smoked paprika, salt, and pepper.
- Stir in Cotija cheese, cilantro, egg, and milk until a thick batter forms.
- Heat 1 inch of vegetable oil in a skillet over medium heat.
- Drop spoonfuls of batter into hot oil, flatten slightly, and fry 2–3 minutes per side until golden and crispy.
- Remove fritters and drain on paper towels.
- Serve warm with lime wedges and sprinkle with extra Cotija cheese.
