Balsamic Marinated Flank Steak with Blue Cheese Crust🍽️🔥
Ingredients:
1.5 to 2 lbs flank steak
1 cup crumbled blue cheese
2 tablespoons panko bread crumbs
½ tablespoon butter
For the Marinade:
½ cup olive oil
½ cup balsamic vinegar
½ teaspoon salt
½ teaspoon freshly cracked black pepper
2 green onions, roughly chopped
2 tablespoons brown sugar
Instructions:
Prepare the Marinade:
In a glass baking dish, combine the olive oil, balsamic vinegar, salt, black pepper, green onions, and brown sugar. Whisk the ingredients until well mixed.
Marinate the Flank Steak:
Score the smooth side of the flank steak in 1-inch sections to help the marinade penetrate the meat. Place the steak in the marinade, ensuring both sides are well-coated. Let it marinate for 30-45 minutes, occasionally spooning the marinade into the scored sections.
Broil the Steak:
Preheat your oven’s broiler to high, positioning a rack close to the top. Remove the steak from the marinade and place it scored side up on a broiler pan. Broil the steak for about 3 minutes on each side, until nicely browned.
Prepare the Blue Cheese Crust:
Melt the butter and mix it with the panko bread crumbs. After broiling both sides of the steak, press the blue cheese crumbles into the scored sections of the steak, and sprinkle the panko mixture on top.
Finish Under the Broiler:
Return the steak to the broiler for an additional 5 minutes, or until the cheese and bread crumb topping is golden and bubbly.
Rest and Serve:
Allow the steak to rest for 10-15 minutes after broiling. Then, slice the steak thinly against the grain and serve.
