Ingredients:

  • 1½ cups all-purpose flour
  • 2 tbsp sugar
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1¼ cups milk
  • 1 large egg
  • 3 tbsp melted butter
  • 1 tsp vanilla extract

Instructions:

  1. In a bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In another bowl, whisk the milk, egg, melted butter, and vanilla.
  3. Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
  4. Heat a non-stick pan over medium heat and lightly grease it.
  5. Pour ¼ cup of batter onto the pan for each pancake. Cook until bubbles form and edges look set, then flip and cook the other side until golden.
  6. Serve warm with syrup, honey, or your favorite topping.

Tip:

  • Let the batter rest for 5 minutes before cooking for extra fluffiness.
