Ingredients
For the Slaw
- 2 cups shredded cabbage (red or green)
- 1 cup shredded carrots
- ¼ cup chopped cilantro

For the Tofu
- 1 block firm tofu, pressed and cubed
- 2 tbsp soy sauce
- 1 tbsp cornstarch
For the Peanut Dressing
- 2 tbsp peanut butter
- 1 tbsp soy sauce
- 1 tbsp lime juice
- 1 tsp maple syrup
- 2–3 tbsp water
Directions
- Prepare Tofu: Preheat oven to 400°F (200°C). Toss tofu cubes with soy sauce and cornstarch. Bake 20–25 minutes until crispy.
- Make Slaw: In a large bowl, combine cabbage, carrots, cilantro, and green onions.
- Make Dressing: Whisk peanut butter, soy sauce, lime juice, maple syrup, and water until smooth.
- Assemble: Toss slaw with dressing. Top with crispy tofu and chopped peanuts. Serve immediately.
