Ingredients

For the Slaw

  • 2 cups shredded cabbage (red or green)
  • 1 cup shredded carrots
  • ¼ cup chopped cilantro
  • ¼ cup sliced green onions
  • ¼ cup chopped peanuts (optional)

For the Tofu

  • 1 block firm tofu, pressed and cubed
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch

For the Peanut Dressing

  • 2 tbsp peanut butter
  • 1 tbsp soy sauce
  • 1 tbsp lime juice
  • 1 tsp maple syrup
  • 2–3 tbsp water

Directions

  1. Prepare Tofu: Preheat oven to 400°F (200°C). Toss tofu cubes with soy sauce and cornstarch. Bake 20–25 minutes until crispy.
  2. Make Slaw: In a large bowl, combine cabbage, carrots, cilantro, and green onions.
  3. Make Dressing: Whisk peanut butter, soy sauce, lime juice, maple syrup, and water until smooth.
  4. Assemble: Toss slaw with dressing. Top with crispy tofu and chopped peanuts. Serve immediately.
