Ingredients

For the Cupcakes

For the Caramel Frosting

  • 1/2 cup unsalted butter
  • 1 cup packed brown sugar
  • 1/4 cup milk
  • 2 cups powdered sugar
  • 1 tsp vanilla extract

Directions

Prepare the Cupcakes

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, buttermilk, vegetable oil, and vanilla extract. Beat on medium speed until well combined.
  4. Stir in boiling water until batter is smooth. Fold in coconut and pecans.
  5. Divide batter evenly among liners, filling each about 2/3 full.
  6. Bake for 18–20 minutes or until a toothpick comes out clean. Cool completely.

Make the Caramel Frosting

  1. Melt butter in a saucepan over medium heat. Stir in brown sugar and milk.
  2. Bring to a boil and cook for 2 minutes, stirring constantly.
  3. Remove from heat and cool for 5 minutes.
  4. Stir in powdered sugar and vanilla until smooth.

Frost and Serve

  1. Frost cooled cupcakes with caramel frosting.
  2. Top with extra pecans if desired.
