Ingredients 🛒

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 4 cups fresh spinach
  • 3 green onions, finely chopped
  • 2 tbsp butter
  • 2 tbsp flour
  • 1½ cups milk
  • ½ cup grated Parmesan cheese
  • Salt & black pepper, to taste
  • Fresh parsley, for garnish

Instructions 👩‍🍳

  1. Prep oven: Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Caramelize mushrooms: Heat olive oil in skillet. Add mushrooms, cook until golden and caramelized. Set aside.
  3. Sauté spinach: In same pan, wilt spinach briefly. Season lightly. Set aside.
  4. Green onion sauce: Melt butter in saucepan. Add green onions, sauté 1–2 minutes. Stir in flour, cook briefly. Slowly whisk in milk until smooth. Add Parmesan, salt, and pepper. Simmer until creamy.
  5. Chicken: Season chicken breasts with salt and pepper. Sear lightly in skillet until golden (not fully cooked).
  6. Assemble: Place chicken in baking dish. Top with spinach, mushrooms, and pour sauce over. Sprinkle extra Parmesan if desired.
  7. Bake: Bake uncovered for 25–30 minutes until chicken is cooked through and sauce is bubbly.
  8. Serve: Garnish with parsley. Enjoy with rice
