Ingredients
For the Chicken Meatballs
- 1 lb ground chicken
- ⅓ cup breadcrumbs (panko or regular)
- ¼ cup finely chopped red onion
- 2 cloves garlic, minced
- 1 tbsp chopped fresh parsley
- 1 tbsp chopped fresh dill
- 1 tsp dried oregano
- Zest of 1 lemon
- 1 tbsp lemon juice
- 1 egg, lightly beaten
- Salt and black pepper, to taste
- 1 tbsp olive oil (for cooking)
For the Tzatziki Sauce
- 1 cup Greek yogurt
- ½ cucumber, grated and drained
- 1 clove garlic, minced
- 1 tbsp lemon juice
- 1 tbsp chopped fresh dill
- 1 tbsp chopped fresh mint (optional)
- Salt and black pepper, to taste
- 1 tbsp extra virgin olive oil
Directions
- Make Tzatziki: Combine yogurt, cucumber, garlic, lemon juice, dill, mint (optional), salt, and pepper. Stir well, drizzle with olive oil, and refrigerate.
- Prepare Meatballs: In a bowl, mix chicken, breadcrumbs, onion, garlic, parsley, dill, oregano, lemon zest, lemon juice, and egg. Season with salt and pepper.
- Shape: Roll mixture into 1-inch meatballs.
- Cook: Heat olive oil in a skillet over medium heat. Cook meatballs 10–12 minutes, turning occasionally, until golden and cooked through.
- Serve: Arrange meatballs on a platter with tzatziki. Garnish with dill and lemon wedges. Serve with pita bread or Greek salad.
