Ingredients

For the Lamb Chops

  • 8 lamb chops (about 1 inch thick)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste

For the Mint Chimichurri

  • 1 cup fresh parsley, chopped
  • 1/2 cup fresh mint leaves, chopped
  • 2 cloves garlic, minced
  • 1/4 cup red wine vinegar
  • 1/2 cup olive oil
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • Salt and pepper, to taste

Instructions

1. Prepare the Marinade for the Lamb Chops

  1. In a bowl, combine olive oil, minced garlic, dried oregano, salt, and pepper.
  2. Rub the marinade all over the lamb chops and let sit for at least 15 minutes. For best results, marinate in the refrigerator for 1–2 hours.

2. Make the Mint Chimichurri

  1. In a medium bowl, mix parsley, mint, garlic, red wine vinegar, olive oil, red pepper flakes, salt, and pepper.
  2. Taste and adjust seasoning as needed. Set aside.

3. Grill the Lamb Chops

  1. Preheat grill to medium-high heat.
  2. Place marinated lamb chops on grill. Cook 4–5 minutes per side for medium-rare, or longer to desired doneness.
  3. Remove from grill and let rest for a few minutes.

4. Serve

  1. Arrange lamb chops on a serving platter.
  2. Drizzle mint chimichurri over the chops or serve on the side.
  3. Garnish with extra mint leaves or parsley if desired.

Tips

  • For more intense flavor, marinate lamb chops overnight.
  • Serve with grilled vegetables, couscous, or a fresh salad for a complete meal.
