Ingredients

For the Pastry Crust

  • 1¼ cups all-purpose flour
  • ¼ cup powdered sugar
  • ½ cup unsalted butter, cold and cubed
  • Pinch of salt

For the Hazelnut Custard Filling

  • 1 cup whole milk
  • ½ cup heavy cream
  • 3 large eggs
  • ½ cup granulated sugar
  • ¼ cup hazelnut paste or hazelnut spread
  • 1 tsp vanilla extract

For the Praline Topping

  • ½ cup granulated sugar
  • ¼ cup chopped hazelnuts

Directions 👩‍🍳

  1. Preheat oven: 350°F (175°C). Grease a tart or flan pan.
  2. Make crust: Combine flour, powdered sugar, and salt in a food processor. Add cold butter and pulse until coarse crumbs form. Press into pan and bake 12–15 minutes until golden.
  3. Prepare custard: Warm milk, cream, and sugar in a saucepan. In a bowl, whisk eggs with hazelnut paste and vanilla. Slowly add warm milk mixture while whisking.
  4. Bake custard: Pour mixture into baked crust. Bake 25–30 minutes until set. Cool completely.
  5. Make praline: Melt sugar in a saucepan until golden. Stir in hazelnuts. Pour onto parchment, cool, and break into pieces.
  6. Finish: Top cooled flan with praline pieces for a crunchy finish.
