Ingredients
For the Pastry Crust
- 1¼ cups all-purpose flour
- ¼ cup powdered sugar
- ½ cup unsalted butter, cold and cubed
- Pinch of salt
For the Hazelnut Custard Filling
- 1 cup whole milk
- ½ cup heavy cream
- 3 large eggs
- ½ cup granulated sugar
- ¼ cup hazelnut paste or hazelnut spread
- 1 tsp vanilla extract
For the Praline Topping
- ½ cup granulated sugar
- ¼ cup chopped hazelnuts
Directions 👩🍳
- Preheat oven: 350°F (175°C). Grease a tart or flan pan.
- Make crust: Combine flour, powdered sugar, and salt in a food processor. Add cold butter and pulse until coarse crumbs form. Press into pan and bake 12–15 minutes until golden.
- Prepare custard: Warm milk, cream, and sugar in a saucepan. In a bowl, whisk eggs with hazelnut paste and vanilla. Slowly add warm milk mixture while whisking.
- Bake custard: Pour mixture into baked crust. Bake 25–30 minutes until set. Cool completely.
- Make praline: Melt sugar in a saucepan until golden. Stir in hazelnuts. Pour onto parchment, cool, and break into pieces.
- Finish: Top cooled flan with praline pieces for a crunchy finish.
