Herb-Crusted Lamb Chops with Mint Sauce 🍖🌿✨

Ingredients
For the Lamb Chops
- 8 lamb chops, about 1 inch thick
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 2 tbsp fresh rosemary, chopped
- 1 tbsp fresh thyme, chopped
- Salt and freshly ground black pepper, to taste
For the Mint Sauce
- 1 cup fresh mint leaves, finely chopped
- 2 tbsp apple cider vinegar
- 1 tbsp granulated sugar
- ¼ cup boiling water
- Pinch of salt
Directions
- Prepare Herb Mixture: Mix garlic, rosemary, thyme, olive oil, salt, and pepper. Rub evenly over lamb chops. Marinate at room temperature for 30 minutes.
- Prepare Mint Sauce: Combine mint, vinegar, sugar, and salt. Pour boiling water over and stir until sugar dissolves. Let sit for 20 minutes.
- Cook Lamb Chops: Preheat grill or grill pan to medium-high. Grill chops 3–4 minutes per side for medium-rare, or until desired doneness. Rest for 5 minutes.
- Serve: Plate lamb chops warm, drizzle with mint sauce, and serve with sides of choice.
