Ingredients

For the Lamb Chops

  • 8 lamb chops, about 1 inch thick
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • Salt and freshly ground black pepper, to taste

For the Mint Sauce

  • 1 cup fresh mint leaves, finely chopped
  • 2 tbsp apple cider vinegar
  • 1 tbsp granulated sugar
  • ¼ cup boiling water
  • Pinch of salt

Directions

  1. Prepare Herb Mixture: Mix garlic, rosemary, thyme, olive oil, salt, and pepper. Rub evenly over lamb chops. Marinate at room temperature for 30 minutes.
  2. Prepare Mint Sauce: Combine mint, vinegar, sugar, and salt. Pour boiling water over and stir until sugar dissolves. Let sit for 20 minutes.
  3. Cook Lamb Chops: Preheat grill or grill pan to medium-high. Grill chops 3–4 minutes per side for medium-rare, or until desired doneness. Rest for 5 minutes.
  4. Serve: Plate lamb chops warm, drizzle with mint sauce, and serve with sides of choice.
