Homemade Almond Nougat 🍬✨

Ingredients
- 2 cups granulated sugar
- 1 cup honey
- 1/4 cup water
- 2 large egg whites
- 1/4 tsp salt
- 1 tsp vanilla extract
- 2 cups toasted almonds
- Edible wafer paper (optional)
Steps
- Prepare the Pan: Line a 9×9-inch baking pan with parchment paper or edible wafer paper.
- Heat Sugar Mixture: In a heavy saucepan, combine sugar, honey, and water. Cook over medium heat, stirring until sugar dissolves. Continue cooking without stirring until mixture reaches 310°F (154°C).
- Whip Egg Whites: Beat egg whites and salt in a large bowl until stiff peaks form.
- Combine Mixtures: Slowly pour hot sugar syrup into egg whites while beating on low speed. Increase speed to medium until thickened.
- Add Flavor and Nuts: Stir in vanilla extract and toasted almonds quickly.
- Transfer to Pan: Spread nougat mixture into prepared pan. Press evenly with greased spatula or wafer paper.
- Cool and Set: Let nougat cool completely at room temperature for at least 2 hours.
- Cut into Pieces: Remove from pan and cut into squares or rectangles.
