Ingredients

  • 1½ cups rolled oats
  • 1 cup milk
  • 1 tbsp honey
  • 2¼ tsp active dry yeast
  • 2¼ cups all-purpose flour
  • 1 tsp salt
  • ¼ cup warm water
  • 2 tbsp olive oil (or melted butter)
  • ½ cup chopped walnuts (optional)
  • Extra oats for topping

Instructions

  1. Prep Oven: Preheat to 375°F (190°C). Grease a loaf pan.
  2. Soften Oats: Combine oats and milk in a bowl. Let sit 10 minutes.
  3. Activate Yeast: Dissolve yeast and honey in warm water. Let sit 5 minutes until frothy.
  4. Mix Dough: Add yeast mixture to oats with olive oil, salt, and flour. Mix until dough forms.
  5. Knead: Knead on floured surface 5–7 minutes until smooth and elastic.
  6. First Rise: Place dough in greased bowl. Cover and let rise 1 hour until doubled.
  7. Shape: Punch down dough. Transfer to loaf pan. Sprinkle with oats and walnuts.
  8. Bake: Bake 30–35 minutes until golden and hollow-sounding when tapped.
  9. Cool: Let cool on wire rack before slicing.
