Ingredients
- 3 cups all-purpose flour
- 1 cup whole wheat flour
- 1/2 cup rolled oats (plus extra for topping)
- 2 tbsp honey
- 1 1/4 tsp salt
- 1 packet (2 1/4 tsp) active dry yeast
- 1 1/4 cups warm water (110°F / 45°C)
- 2 tbsp olive oil (plus extra for greasing)
- 1 egg (optional, for egg wash)
- 1 tbsp water (for egg wash)
Instructions
- Activate the yeast: Mix warm water, honey, and yeast in a bowl. Let sit 5–10 minutes until frothy.
- Mix the dough: In a large bowl, combine flours, oats, and salt. Add yeast mixture and olive oil. Stir until dough forms.
- Knead: Knead on a floured surface for 8–10 minutes until smooth and elastic, or use a stand mixer for 5–6 minutes.
- First rise: Place dough in a greased bowl, cover, and let rise 1–1.5 hours until doubled.
- Shape: Punch down and shape into a round loaf. Place on parchment-lined baking sheet. Cover and let rise 30–40 minutes.
- Prepare for baking: Preheat oven to 375°F (190°C). Brush with egg wash and sprinkle oats if desired.
- Bake: Bake 30–35 minutes until golden and sounds hollow when tapped.
- Cool and serve: Cool on wire rack at least 15 minutes before slicing. Serve with butter, honey, or your favorite spread.
