Ingredients 🛒
- 2 large onions, cut into thick rings and separated
- 4 jalapeños, seeded and finely chopped
- 8 oz cream cheese, softened
- ½ cup shredded cheddar cheese
- ½ cup cooked bacon bits
- ½ tsp garlic powder
- Salt & pepper to taste
- 2 eggs, beaten
- Flour (for coating)
- Breadcrumbs (for coating)
- Oil (for frying)

- Prepare filling: In a bowl, mix cream cheese, cheddar, jalapeños, bacon bits, garlic powder, salt, and pepper until smooth.
- Stuff onion rings: Take two onion rings of similar size. Fill one with the cream cheese mixture, then place the second ring on top to “sandwich” the filling.
- Coat: Dip stuffed rings in flour, then beaten eggs, then breadcrumbs. Repeat for a thicker crust.
- Fry: Heat oil to 350°F (175°C). Fry rings until golden brown and crispy, about 2–3 minutes per side.
- Drain: Place on paper towels to remove excess oil.
- Serve: Enjoy hot with ranch or spicy dipping sauce.
