Ingredients 🛒

  • 2 large onions, cut into thick rings and separated
  • 4 jalapeños, seeded and finely chopped
  • 8 oz cream cheese, softened
  • ½ cup shredded cheddar cheese
  • ½ cup cooked bacon bits
  • ½ tsp garlic powder
  • Salt & pepper to taste
  • 2 eggs, beaten
  • Flour (for coating)
  • Breadcrumbs (for coating)
  • Oil (for frying)

Instructions 👩‍🍳

  1. Prepare filling: In a bowl, mix cream cheese, cheddar, jalapeños, bacon bits, garlic powder, salt, and pepper until smooth.
  2. Stuff onion rings: Take two onion rings of similar size. Fill one with the cream cheese mixture, then place the second ring on top to “sandwich” the filling.
  3. Coat: Dip stuffed rings in flour, then beaten eggs, then breadcrumbs. Repeat for a thicker crust.
  4. Fry: Heat oil to 350°F (175°C). Fry rings until golden brown and crispy, about 2–3 minutes per side.
  5. Drain: Place on paper towels to remove excess oil.
  6. Serve: Enjoy hot with ranch or spicy dipping sauce.
