Ingredients
- 3–4 medium russet or Yukon gold potatoes (skin on or peeled)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1 tsp paprika
- Salt & black pepper, to taste
- 1 cup shredded mozzarella cheese (or mozzarella + feta blend)
- ½ cup cherry tomatoes, diced
- ¼ cup Kalamata olives, sliced
- 2 tbsp red onion, finely chopped
- 2 tbsp fresh parsley or basil, chopped
- 2 tbsp crumbled feta cheese (optional, for garnish)
Instructions
- Preheat oven: Set oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Prepare potatoes: Slice potatoes into ¼-inch rounds. Toss with olive oil, garlic powder, oregano, paprika, salt, and pepper.
- Bake base: Arrange potato slices in a single layer on the baking sheet. Bake for 20 minutes until lightly golden.
- Add toppings: Sprinkle mozzarella (or mozzarella + feta blend) over potato rounds. Top with cherry tomatoes, olives, and red onion.
- Finish baking: Return to oven for 10–12 minutes until cheese is melted and bubbly.
