  • 1 cup shredded mozzarella cheese (or mozzarella + feta blend)
  • ½ cup cherry tomatoes, diced
  • ¼ cup Kalamata olives, sliced
  • 2 tbsp red onion, finely chopped
  • 2 tbsp fresh parsley or basil, chopped
  • 2 tbsp crumbled feta cheese (optional, for garnish)

Instructions

  1. Preheat oven: Set oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Prepare potatoes: Slice potatoes into ¼-inch rounds. Toss with olive oil, garlic powder, oregano, paprika, salt, and pepper.
  3. Bake base: Arrange potato slices in a single layer on the baking sheet. Bake for 20 minutes until lightly golden.
  4. Add toppings: Sprinkle mozzarella (or mozzarella + feta blend) over potato rounds. Top with cherry tomatoes, olives, and red onion.
