Ingredients
- 1 lb fresh salmon fillet, cooked and flaked
- 1 cup crumbled feta cheese
- ½ cup panko breadcrumbs
- ¼ cup chopped fresh parsley
- 2 eggs, lightly beaten
- 1 tsp garlic powder
- ½ tsp ground cumin
- Salt & black pepper, to taste
- 2 tbsp olive oil (for pan-frying)
Instructions
- Prep salmon: Cook salmon (bake, steam, or pan-sear) and let cool. Flake into a large bowl, removing any skin and bones.
- Mix: Add feta, panko, parsley, eggs, garlic powder, cumin, salt, and pepper. Gently combine until the mixture holds together; add a little extra panko if too wet.
- Shape: Form 8–10 small patties (about 2½–3 inches wide). Chill 10–15 minutes for easier handling.
- Cook: Heat olive oil in a skillet over medium heat. Fry patties 3–4 minutes per side until deep golden and cooked through.
- Serve: Drain briefly on paper towels. Plate with lemon wedges and your favorite dip.

- Extra zest: Add lemon zest and a pinch of smoked paprika for brightness and depth.
- Bind better: If patties crumble, chill longer or add 1–2 tsp mayo or an extra spoon of breadcrumbs.
