Ingredients

  • 1 1/2 cups chocolate cookie crumbs
  • 5 tablespoons unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy whipping cream
  • 1 cup semisweet chocolate chips, melted and slightly cooled
  • Whipped cream and chocolate shavings, for topping

Instructions

  1. Prepare the Crust: Combine cookie crumbs and melted butter. Divide into 12 muffin cups lined with cupcake liners. Press firmly and refrigerate.
  2. Prepare the Filling: Beat cream cheese and sugar until smooth. Mix in vanilla and cream. Add melted chocolate and blend until creamy.
  3. Assemble the Cheesecakes: Divide filling evenly among crusts. Smooth tops with spoon or spatula.
  4. Chill: Refrigerate for at least 4 hours until firm.
  5. Decorate and Serve: Top with whipped cream and chocolate shavings. Serve chilled.
