Ingredients
- 1 1/2 cups chocolate cookie crumbs
- 5 tablespoons unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup heavy whipping cream
- 1 cup semisweet chocolate chips, melted and slightly cooled
- Whipped cream and chocolate shavings, for topping
Instructions
- Prepare the Crust: Combine cookie crumbs and melted butter. Divide into 12 muffin cups lined with cupcake liners. Press firmly and refrigerate.
- Prepare the Filling: Beat cream cheese and sugar until smooth. Mix in vanilla and cream. Add melted chocolate and blend until creamy.
- Assemble the Cheesecakes: Divide filling evenly among crusts. Smooth tops with spoon or spatula.
- Chill: Refrigerate for at least 4 hours until firm.
- Decorate and Serve: Top with whipped cream and chocolate shavings. Serve chilled.
