Pecan Pie Cobbler

Ingredients

  • 1 package refrigerated pie crusts
  • 2 1/2 cups light corn syrup
  • 2 1/2 cups packed brown sugar
  • 1/2 cup butter, melted
  • 4 teaspoons vanilla extract
  • 6 eggs, lightly beaten
  • 2 cups pecans, chopped
  • 2 cups pecan halves

Directions

  1. Preheat oven to 350°F (175°C). Unroll pie crusts and press into bottom and sides of a large rectangular baking dish.
  2. In a large bowl, combine corn syrup, brown sugar, butter, vanilla, and eggs. Mix well.
  3. Stir in chopped pecans and pour mixture into crust.
  4. Arrange pecan halves on top of filling.
  5. Bake for 45–50 minutes, until set and crust is golden. Cover edges with foil if browning too quickly.
  6. Let cool for at least 1 hour before serving.

This dessert is perfect for holiday gatherings or special occasions.
