Pecan Pie Cobbler
Ingredients
- 1 package refrigerated pie crusts
- 2 1/2 cups light corn syrup
- 2 1/2 cups packed brown sugar
- 1/2 cup butter, melted
- 4 teaspoons vanilla extract
- 6 eggs, lightly beaten
- 2 cups pecans, chopped
- 2 cups pecan halves
Directions
- Preheat oven to 350°F (175°C). Unroll pie crusts and press into bottom and sides of a large rectangular baking dish.
- In a large bowl, combine corn syrup, brown sugar, butter, vanilla, and eggs. Mix well.
- Stir in chopped pecans and pour mixture into crust.
- Arrange pecan halves on top of filling.
- Bake for 45–50 minutes, until set and crust is golden. Cover edges with foil if browning too quickly.
- Let cool for at least 1 hour before serving.
This dessert is perfect for holiday gatherings or special occasions.
