Ingredients

  • 8 medium fresh beets
  • 1 cup vinegar
  • 1/2 cup sugar
  • 1 1/2 teaspoons whole cloves
  • 1 1/2 teaspoons whole allspice
  • 1/2 teaspoon salt

Directions

  1. Scrub beets and trim tops to 1 inch.
  2. Place in a Dutch oven and add water to cover.
  3. Bring to a boil, then reduce heat and simmer covered for 25–30 minutes or until tender.
  4. Remove from water and let cool. Peel and slice beets, then place in a bowl and set aside.
  5. In a small saucepan, combine vinegar, sugar, cloves, allspice, and salt.
  6. Bring to a boil and cook for 5 minutes.
  7. Pour hot mixture over sliced beets.
  8. Refrigerate for at least 1 hour to allow flavors to develop.
  9. Drain before serving and enjoy!
