Ingredients
- 1½ cups unsweetened shredded coconut (plus ½ cup for rolling)
- 1 cup dried pineapple chunks (soft, not candied)
- ½ cup raw cashews or almonds
- 2 tbsp coconut oil, softened
- 1 tbsp honey or pure maple syrup
- 1 tsp pure vanilla extract
- Pinch of fine sea salt
Instructions
- Prep Ingredients: If pineapple is firm, soak in hot water 10 min, drain, and pat dry.
- Process Base: In food processor, pulse 1½ cups coconut, pineapple, and cashews until finely chopped and clumping.
- Bind Mixture: Add coconut oil, honey/maple syrup, vanilla, and salt. Process until sticky and moldable.
