Ingredients

For the Cake

  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 cup crushed pineapple, drained

For the Glaze

  • 1/2 cup powdered sugar
  • 2 tbsp pineapple juice

Directions

  1. Preheat: Set oven to 350°F (175°C). Grease and flour a loaf pan.
  2. Dry Mix: Whisk flour, baking powder, and salt in a medium bowl.
  3. Cream Butter & Sugar: Beat butter and sugar until light and fluffy. Add eggs one at a time, then vanilla.
  4. Combine: Add flour mixture in three parts, alternating with sour cream. Mix until just combined.
  5. Add Pineapple: Fold in crushed pineapple gently.
  6. Bake: Pour batter into loaf pan. Bake 50–60 minutes until toothpick comes out clean.
  7. Cool: Let cake cool 10 minutes in pan, then transfer to wire rack.
  8. Glaze: Whisk powdered sugar and pineapple juice until smooth. Drizzle over cooled cake.
