Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a springform pan to form the crust. Bake for 10 minutes.
  2. In a separate bowl, beat cream cheese and powdered sugar until smooth.
  3. Add heavy cream, pistachio paste, and vanilla extract. Mix until fully incorporated and smooth.
  4. Pour pistachio mixture over crust and spread evenly. Refrigerate for at least 4 hours or overnight.
  5. Before serving, top with chopped pistachios for crunch.
