Ingredients

  • 1 cup butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup finely chopped pistachios (plus extra for topping)
  • Powdered sugar or granulated sugar (for dusting)

Instructions

  1. Preheat: Set oven to 350°F (175°C). Line baking sheet with parchment paper.
  2. Cream: Beat butter, granulated sugar, and brown sugar until light and fluffy. Add vanilla and mix well.
  3. Dry Ingredients: In a separate bowl, whisk flour, baking powder, and salt. Gradually add to butter mixture.
  4. Fold In: Stir in chopped pistachios until evenly distributed.
  5. Shape: Scoop dough into balls and place on baking sheet. Flatten slightly. Sprinkle tops with extra pistachios and sugar.
  6. Bake: Bake 10–12 minutes until edges are lightly golden. Let cool on wire rack.
