🍋🌰 Pistachio Lemon Breakfast Bread 🍞✨
A moist, zesty loaf infused with lemon and crunchy pistachios, topped with a tangy glaze.
Ingredients
For the Bread
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup unsalted butter, softened
- ¾ cup granulated sugar
- 2 large eggs
- ½ cup sour cream or plain yogurt
- 1 tbsp lemon zest (≈1 lemon)
- ¼ cup fresh lemon juice (≈1 lemon)
- 1 tsp vanilla extract
- ½ cup shelled pistachios, chopped (plus extra for garnish)
For the Lemon Glaze
- 1 cup powdered sugar
- 2 tbsp fresh lemon juice
- ½ tsp lemon zest (optional)
Instructions
- Preheat Oven: Preheat to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line with parchment.
- Dry Mix: Whisk flour, baking powder, baking soda, and salt in a medium bowl.
- Cream Butter & Sugar: Beat butter and sugar until light and fluffy (3–4 min).
- Add Wet Ingredients: Beat in eggs one at a time. Stir in sour cream, lemon zest, lemon juice, and vanilla until smooth.
- Combine: Gradually add dry mix to wet mix, stirring gently. Fold in pistachios.
- Bake: Pour batter into loaf pan. Smooth top. Bake 55–60 min until toothpick comes out clean.
- Glaze: Whisk powdered sugar, lemon juice, and zest until smooth.
- Cool & Finish: Cool bread 10 min in pan, then transfer to rack. Drizzle glaze and sprinkle pistachios.
- Serve: Slice and enjoy as a breakfast treat or light dessert.
