Ingredients
Filling
- 1 lb lean ground beef
- 1 cup diced yellow onion
- 1 medium green bell pepper, diced
- 3 oz pepperoni, chopped
- 1 tbsp chopped garlic

- 1 tbsp Italian seasoning
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese

- 8 large flour tortillas
Topping
- 2 cups pizza sauce
- 2½ cups shredded mozzarella cheese
- 3 oz pepperoni slices
- ÂĽ cup crumbled bacon
Steps
- Cook Filling: In a skillet, cook ground beef, onion, bell pepper, and garlic until beef is browned and veggies softened. Drain excess fat.
- Mix: Stir in chopped pepperoni, pizza sauce, Italian seasoning, ricotta, mozzarella, and bacon until well combined.
- Assemble: Spoon filling into tortillas, roll up tightly, and place seam-side down in a greased baking dish.
- Top: Pour pizza sauce over enchiladas. Sprinkle with mozzarella, pepperoni slices, and bacon.
- Bake: Bake at 375°F (190°C) for 20–25 minutes until cheese is melted and bubbly.
