Ingredients:

  • 2 ripe plantains (sliced)
  • 6 large eggs
  • 1/4 cup milk
  • 1/2 onion (chopped)
  • 1/2 red bell pepper (sliced)
  • 1/2 green bell pepper (sliced)
  • Salt and pepper to taste
  • 1 tablespoon oil or butter (for greasing)

Instructions:

  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, whisk together the eggs, milk, salt, and pepper until smooth.
  3. Grease a baking dish with oil or butter.
  4. Pour the egg mixture into the dish.
  5. Arrange the sliced plantains and bell peppers on top in a decorative pattern.
  6. Bake for 25–30 minutes or until set and golden brown on top.
  7. Let it cool slightly before slicing and serving. Enjoy warm or at room temperature!
