Ingredients

  • 6 slices bacon, chopped
  • 1 onion, diced
  • 1 lb baby potatoes, halved
  • 1 lb fresh green beans, trimmed
  • 1 packet ranch seasoning mix
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook bacon: In a large skillet, cook chopped bacon over medium heat until crispy. Remove and set aside, leaving some drippings in the pan.
  2. Sauté onion: Add diced onion to the skillet and cook until translucent, about 3–4 minutes.
  3. Add potatoes: Stir in halved baby potatoes and cook for 10–12 minutes until golden and tender, stirring occasionally.
  4. Add green beans: Add trimmed green beans to the skillet. Drizzle with olive oil and sprinkle ranch seasoning over everything. Stir to coat.
  5. Simmer: Cover and cook for 8–10 minutes until beans are tender but still vibrant.
  6. Finish: Return cooked bacon to the skillet. Toss everything together and season with salt and pepper to taste.
  7. Serve: Garnish with fresh parsley and serve warm as a side or light main dish.
