A luscious two-layer dessert—velvety red cake topped with creamy cheesecake and fresh strawberries!

Ingredients

For the Red Velvet Cake

  • 1 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tbsp cocoa powder
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp red food coloring
  • 1/2 tsp white vinegar

For the Cheesecake Layer

  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

For the Topping

  • 1 cup fresh strawberries, sliced
  • 1/2 cup strawberry preserves
  • Whipped cream for garnish

Prepare the Red Velvet Cake

  1. Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
  2. Whisk flour, sugar, cocoa, baking powder, baking soda, and salt in a bowl.
  3. In another bowl, mix oil, buttermilk, egg, vanilla, red food coloring, and vinegar until smooth.
  4. Combine wet and dry ingredients until just mixed. Pour into pan.
  5. Bake 25–30 minutes, until toothpick comes out clean. Cool completely.

Prepare the Cheesecake Layer

  1. Beat cream cheese and sugar until smooth.
  2. Add eggs one at a time, mixing well. Stir in vanilla.
  3. Pour into greased 8-inch springform pan.
  4. Bake at 325°F (160°C) for 40–45 minutes until set but slightly jiggly. Cool in oven with door ajar, then refrigerate 2 hours or overnight.

Assemble the Cake

  1. Place red velvet cake on serving platter.
  2. Remove cheesecake from pan and place on top of cake.
  3. Heat strawberry preserves until melted; spread over cheesecake.
  4. Arrange fresh strawberries and garnish with whipped cream.
  5. Chill 1–2 hours before serving.
