Ingredients

For the Fritters

  • 2 cups cooked corned beef, finely chopped
  • 1 cup sauerkraut, drained and patted dry
  • 1 1/2 cups shredded Swiss cheese
  • 4 oz cream cheese, softened
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups seasoned breadcrumbs
  • Vegetable oil, for frying

For the Thousand Island Dipping Sauce

  • 1/2 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp sweet pickle relish
  • 1 tsp white vinegar
  • Salt and pepper, to taste

Instructions

  1. Prepare Mixture: Combine corned beef, sauerkraut, Swiss cheese, cream cheese, Dijon mustard, garlic powder, onion powder, salt, and pepper. Mix well. Scoop tablespoon portions, roll into balls, and refrigerate 30 minutes.
  2. Bread Fritters: Set up flour, beaten eggs, and breadcrumbs. Roll each ball in flour, dip in egg, then coat in breadcrumbs.
  3. Fry: Heat oil to 350°F (175°C). Fry fritters in batches 2–3 minutes until golden. Drain on paper towels.
  4. Make Sauce: Mix mayonnaise, ketchup, relish, and vinegar. Season with salt and pepper.
  5. Serve: Arrange fritters on platter with dipping sauce. Garnish and enjoy warm.
