Ingredients
- 12 oz pasta (penne, rotini, or your favorite)
- 1 lb ground beef (or sausage)
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (10 oz) Rotel tomatoes with green chilies
- 1 can (15 oz) tomato sauce
- 1 cup heavy cream (or half & half)
- 2 cups shredded cheddar cheese (or Velveeta for extra creamy)
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp salt
- ½ tsp black pepper
- Fresh parsley or green onions, for garnish
Directions
- Cook pasta: Boil pasta according to package directions until al dente. Drain and set aside.
- Brown beef: In a large skillet, cook ground beef with onion until browned. Drain excess fat. Add garlic and cook 1 more minute.
- Make sauce: Stir in Rotel, tomato sauce, chili powder, paprika, salt, and pepper. Simmer 5 minutes.

- Melt cheese: Add shredded cheddar (or Velveeta) and mix until melted and creamy.
- Combine: Toss pasta into the sauce until fully coated.
