Sausage, Peppers, and Onions 🌭🌶️🧅
A classic, hearty dish with sweet peppers, caramelized onions, and savory sausage—perfect for weeknight dinners!
Ingredients
- 6 cups yellow onions (~1½ large onions), peeled and sliced into rings
- 2 large bell peppers (4 cups), sliced (about ¼ inch thick)
- 1 (12-ounce) package fully cooked reduced-fat chicken or turkey sausages (4 sausages)
- Cooking spray
- 3 tsp olive oil, divided
- ¼ tsp dried oregano
- ¼ tsp dried basil
- Salt and freshly ground black pepper, to taste
- 2 tsp fresh garlic, minced
- 1 tbsp balsamic vinegar
Instructions
- Prep: Spray a large skillet with cooking spray and heat over medium heat.
- Sauté Onions: Add onions and 2 tsp olive oil. Cook until softened and lightly caramelized, about 10 minutes.
- Add Peppers: Stir in bell peppers, oregano, basil, salt, and pepper. Cook 5–7 minutes until tender.
- Add Garlic & Sausages: Stir in garlic and sliced sausages. Cook until sausages are heated through and slightly browned.
- Finish: Drizzle with balsamic vinegar and remaining olive oil. Toss well and cook 2 more minutes.
- Serve: Enjoy hot as a main dish, or serve in rolls for a hearty sandwich.
