A classic, hearty dish with sweet peppers, caramelized onions, and savory sausage—perfect for weeknight dinners!

Ingredients

  • 6 cups yellow onions (~1½ large onions), peeled and sliced into rings
  • 2 large bell peppers (4 cups), sliced (about ¼ inch thick)
  • 1 (12-ounce) package fully cooked reduced-fat chicken or turkey sausages (4 sausages)
  • Cooking spray
  • 3 tsp olive oil, divided
  • ¼ tsp dried oregano
  • ¼ tsp dried basil
  • Salt and freshly ground black pepper, to taste
  • 2 tsp fresh garlic, minced
  • 1 tbsp balsamic vinegar

Instructions

  1. Prep: Spray a large skillet with cooking spray and heat over medium heat.
  2. Sauté Onions: Add onions and 2 tsp olive oil. Cook until softened and lightly caramelized, about 10 minutes.
  3. Add Peppers: Stir in bell peppers, oregano, basil, salt, and pepper. Cook 5–7 minutes until tender.
  4. Add Garlic & Sausages: Stir in garlic and sliced sausages. Cook until sausages are heated through and slightly browned.
  5. Finish: Drizzle with balsamic vinegar and remaining olive oil. Toss well and cook 2 more minutes.
  6. Serve: Enjoy hot as a main dish, or serve in rolls for a hearty sandwich.
