Ingredients

  • 1½ cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup shredded cheese (cheddar, mozzarella, or mix)
  • ½ cup cooked diced vegetables (bell peppers, spinach, mushrooms, etc.)
  • 2 tbsp chopped fresh herbs (parsley, chives, or thyme)
  • 2 eggs
  • ¾ cup milk
  • ¼ cup olive oil

Instructions

  1. Preheat Oven: Set oven to 375°F (190°C). Grease or line a muffin tin.
  2. Mix Dry Ingredients: In a bowl, combine flour, baking powder, salt, and pepper.
  3. Add Fillings: Stir in cheese, vegetables, and herbs.
  4. Whisk Wet Ingredients: In another bowl, beat eggs, milk, and oil.
  5. Combine: Pour wet mixture into dry and stir until just combined.
  6. Bake: Spoon into muffin cups and bake for 20–25 minutes until golden and firm.
  7. Cool & Serve: Let cool slightly and enjoy warm or at room temperature.
