🧂 Ingredients
- 4 chicken Marylands (leg quarters)
- 4 tbsp unsalted butter, softened
- 3 garlic cloves, minced
- 1 tsp fresh rosemary
- 1 tsp fresh thyme
- 1 tbsp olive oil
- 1 tsp lemon zest
- Juice of 1/2 lemon
- 1 tsp paprika (optional)
- 1 tsp salt
- 1/2 tsp black pepper
👩🍳 Instructions
- Preheat oven: Set oven to 200°C (400°F). Line a tray with parchment or lightly grease.
- Prepare herb butter: Mix butter, garlic, rosemary, thyme, lemon zest, paprika, salt, and pepper until smooth.
- Prepare chicken: Pat chicken dry. Loosen skin gently and spread herb butter underneath. Rub remaining butter on the outside.
- Add lemon & oil: Drizzle olive oil and lemon juice over chicken. Massage to coat evenly.
- Bake: Place chicken skin-side up on tray. Roast 35–40 minutes until golden and internal temp reaches 75°C (165°F).
- Rest & serve: Let rest 5–10 minutes before serving with sides like roasted veggies, mashed potatoes, or salad.
