🧂 Ingredients

  • 4 chicken Marylands (leg quarters)
  • 4 tbsp unsalted butter, softened
  • 3 garlic cloves, minced
  • 1 tsp fresh rosemary
  • 1 tsp fresh thyme
  • 1 tbsp olive oil
  • 1 tsp lemon zest
  • Juice of 1/2 lemon
  • 1 tsp paprika (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper

👩‍🍳 Instructions

  1. Preheat oven: Set oven to 200°C (400°F). Line a tray with parchment or lightly grease.
  2. Prepare herb butter: Mix butter, garlic, rosemary, thyme, lemon zest, paprika, salt, and pepper until smooth.
  3. Prepare chicken: Pat chicken dry. Loosen skin gently and spread herb butter underneath. Rub remaining butter on the outside.
  4. Add lemon & oil: Drizzle olive oil and lemon juice over chicken. Massage to coat evenly.
  5. Bake: Place chicken skin-side up on tray. Roast 35–40 minutes until golden and internal temp reaches 75°C (165°F).
