For the Shrimp and Sausage:

  • 1 lb (450g) large shrimp, peeled and deveined
  • 6 oz (170g) smoked sausage or andouille, sliced
  • 2 tablespoons olive oil or butter
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Fresh parsley or green onions, for garnish

  1. Prepare the Grits:
    Bring water (or water + milk) to a boil. Add salt. Gradually whisk in the grits. Reduce heat to low and cook for 20–25 minutes, stirring occasionally. Once thick, stir in butter and cheese if desired. Set aside and keep warm.
  2. Cook the Sausage:
    In a skillet over medium heat, cook the sliced sausage until browned and slightly crispy. Remove and set aside.
  3. Cook the Shrimp:
    In the same skillet, heat the oil or butter. Add shrimp, garlic, paprika, pepper, and salt. Cook for 2–3 minutes per side until shrimp are pink and opaque.
  4. Assemble the Dish:
    Spoon grits into serving bowls. Top with cooked sausage and shrimp. Garnish with fresh parsley or green onions.
