Ingredients
- 1 lb shrimp, peeled and deveined
- 2 bell peppers, thinly sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, minced (optional)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce (or hoisin)
- 1 tbsp rice vinegar (or lemon juice)
- 1 tsp sesame oil
- 1 tbsp cornstarch + 2 tbsp water (optional, for thicker sauce)
- 2 tbsp vegetable oil
- Salt and black pepper, to taste
- Chopped green onions or cilantro, for garnish (optional)
Instructions
- Prep: Pat shrimp dry and season lightly with salt and pepper.
- Make sauce: In a small bowl, mix soy sauce, oyster sauce, rice vinegar, sesame oil, and cornstarch slurry (if using).
- Stir-fry veggies: Heat 1 tbsp oil in a large skillet over medium-high. Add bell peppers and onion; cook 3–4 minutes until slightly tender. Add garlic (and ginger, if using) for 30 seconds. Transfer veggies to a plate.
- Sear shrimp: Add remaining 1 tbsp oil. Cook shrimp 1–2 minutes per side until pink.
- Combine: Return veggies to pan, pour in sauce, and toss for 1–2 minutes until coated and glossy.
- Serve: Garnish with green onions or cilantro. Enjoy with rice or noodles.
