This flavorful and easy slow cooker dish blends tender chicken with Mediterranean spices, olives, tomatoes, and creamy feta—perfect for a comforting dinner!

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (14 oz) diced tomatoes
  • 1/2 cup kalamata olives, pitted and halved
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley for garnish (optional)

Directions

  1. Place chicken breasts in the bottom of the slow cooker.
  2. In a bowl, mix tomatoes, olives, feta, olive oil, lemon juice, oregano, garlic powder, salt, pepper, and red pepper flakes.
  3. Pour mixture over chicken, covering evenly.
  4. Cover and cook on low for 6–8 hours or high for 3–4 hours until chicken is tender.
  5. Remove chicken, shred or slice, and return to sauce if desired.
  6. Garnish with parsley and serve with rice, couscous, or pita.
