Ingredients
For the steak
- 1 lb flank or sirloin steak
- 1 tbsp olive oil
- Salt & black pepper to taste
- 1 tsp garlic powder
For the Alfredo sauce
- 1 cup heavy cream
- 1/2 cup Gorgonzola cheese, crumbled
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp unsalted butter
- Salt & black pepper to taste
- 1 tsp Italian seasoning (optional)
For the vegetables
- 8 oz mushrooms, sliced
- 2 cups fresh spinach
- 1 large onion, thinly sliced
- 2 tbsp olive oil
- Salt & black pepper to taste
For the pasta
- 12 oz fettuccine or pasta of choice
Instructions
- Roast mushrooms: Preheat oven to 400°F (200°C). Toss mushrooms with 1 tbsp olive oil, salt, and pepper. Roast 15–20 minutes until tender and browned.
- Caramelize onions: Heat 1 tbsp olive oil in skillet. Add onions and salt. Cook 15–20 minutes, stirring, until golden and caramelized. Set aside.
- Cook pasta: Boil fettuccine in salted water until al dente. Drain and set aside.
- Cook steak: Season steak with salt, pepper, and garlic powder. Heat 1 tbsp olive oil in skillet. Sear 4–5 minutes per side until desired doneness. Rest, then slice thinly against grain.
- Make Alfredo sauce: In same skillet, melt butter. Add garlic and sauté 1 minute. Pour in cream, simmer gently. Stir in Gorgonzola and Parmesan until smooth. Season with salt, pepper, and Italian seasoning.
- Combine: Add pasta, roasted mushrooms, spinach, and caramelized onions to sauce. Toss until coated and heated through.
- Serve: Plate pasta, top with sliced steak, garnish with extra Gorgonzola and spinach.
