Mini cheesecake bites coated in strawberry crunch—sweet, creamy, and perfect for parties or snacking!

Ingredients

Cheesecake Filling

  • 227 g full-fat cream cheese, softened
  • 30 g powdered sugar
  • 5 ml pure vanilla extract
  • 60 ml smooth strawberry purĂ©e

Crunch Coating

  • 90 g (1 cup) graham cracker crumbs
  • 50 g (ÂĽ cup) granulated sugar
  • 57 g (ÂĽ cup) unsalted butter, melted
  • 15 g (½ cup) freeze-dried strawberries, crushed (reserve 1 tbsp for garnish)

Glaze & Finish

  • 240 ml (1 cup) strawberry glaze (store-bought or homemade)

Instructions

  1. Make Filling: Beat cream cheese, powdered sugar, vanilla, and strawberry purée until smooth and glossy (1–2 min). Chill 30 min.
  2. Prep Coating: Mix graham crumbs, sugar, butter, and most crushed strawberries until sandy. Reserve 1 tbsp for garnish.
  3. Shape Bites: Scoop ~15 g portions, roll into 1-inch balls. Place on parchment tray. Freeze 15 min.
  4. Glaze & Coat: Dip balls in strawberry glaze, let excess drip. Roll in graham-strawberry mix. Sprinkle reserved crushed strawberries.
  5. Set & Serve: Chill uncovered ≥1 hr to firm. Serve cold for best texture.
