French Onion Grilled Cheese 🧅🧀🍞

Ingredients
- 2 large onions, thinly sliced
- 2 tablespoons butter (plus more for grilling)
- 1 tablespoon olive oil
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ¼ cup beef broth (optional, for French onion flavor)
- 4 thick slices crusty bread (sourdough or country loaf)
- 6–8 slices cheese (Gruyère, Swiss, or provolone)
- 1 small garlic clove, halved (optional, to rub on bread)
Instructions
- Caramelize onions: Heat butter and olive oil in a skillet over medium-low. Add onions, salt, and pepper. Cook 20–25 minutes, stirring occasionally, until deep golden. Deglaze with beef broth (optional) and reduce until syrupy.
- Prep bread: Lightly rub cut garlic on one side of each bread slice (optional). Butter the outside of each slice.
- Assemble: Layer cheese on the unbuttered side of two slices, add a generous amount of caramelized onions, then more cheese. Top with the remaining bread, buttered side out.
- Grill: Cook in a skillet over medium heat 3–4 minutes per side until bread is golden and cheese is fully melted. Press gently with a spatula for even melting.
- Serve: Rest 1 minute, slice, and enjoy. Great with pickles, chips, or tomato soup.
