🍫 Triple Reese’s Peanut Butter Cookies 🥜✨
Soft, chewy peanut butter cookies stuffed with Reese’s cups and loaded with chocolate chips!
Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup creamy peanut butter (not natural or oily)
- 1 cup light brown sugar, packed
- ½ cup granulated sugar
- 2 large eggs, room temperature
- 2 tsp pure vanilla extract
- 3 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp cornstarch
- ½ tsp fine sea salt
- 1½ cups semi-sweet chocolate chips
- 24 full-size peanut butter cups, unwrapped
- Flaky sea salt, for garnish (optional)
Instructions
- Prepare: Preheat oven to 350°F (175°C). Line 2 baking sheets with parchment paper.
- Cream Foundations: Beat butter and peanut butter until smooth (2 min). Add sugars; beat 2–3 min until fluffy.
- Wet Ingredients: Add eggs one at a time, mixing well. Stir in vanilla.
- Dry Ingredients: Whisk flour, baking soda, cornstarch, and salt. Add gradually to wet mix on low speed. Fold in chocolate chips.
- Assemble: Scoop ~3 tbsp dough. Flatten slightly, place 1 peanut butter cup in center, wrap dough around, and re-roll into ball.
- Bake: Place balls 3 inches apart. Bake 11–13 min until edges set and lightly golden. Centers will look soft.
- Finish: Press extra chocolate chips on top and sprinkle flaky salt (optional). Cool 10 min on sheet, then transfer to rack.
