Ingredients:
- 250g unsalted butter (softened)
- 150g powdered sugar
- 2 eggs
- 1 tsp vanilla extract
- 400g all-purpose flour
- 1 tsp baking powder
- Pinch of salt
Instructions:
- Preheat the oven to 180°C (350°F).
- In a large bowl, beat the softened butter and powdered sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until a smooth dough forms.
- Shape the dough into small balls and flatten them slightly. Place them on a baking tray lined with parchment paper.
- Bake for 12–15 minutes or until the edges are lightly golden.
- Let the cookies cool completely before serving or storing in an airtight container.
Notes:
- For extra flavor, add lemon or orange zest to the dough.
- You can sprinkle sugar on top before baking for a crunchy touch.
