Ingredients
For the Doughnuts
- 2¼ tsp active dry yeast
- ¾ cup warm milk
- ¼ cup sugar
- 2½ cups all-purpose flour
- ¼ tsp salt
- 2 tbsp butter, softened
- 2 egg yolks
- Oil for frying
- Granulated sugar (for coating)
For the Vanilla Cream Filling
- 1 cup heavy cream
- ½ cup mascarpone or cream cheese
- ¼ cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Make the Dough: Mix warm milk and sugar, add yeast and let sit until foamy. Add flour, salt, butter, and egg yolks. Knead until smooth. Cover and let rise for 1 hour.
- Shape & Fry: Roll dough to ½-inch thick, cut into rounds, let rise 30 minutes. Fry until golden. Drain and roll in sugar.
- Make the Cream: Whip heavy cream to soft peaks. Add mascarpone, powdered sugar, and vanilla. Beat until thick and fluffy.
- Assemble: Slice doughnuts halfway and pipe in cream. Stack or serve individually.
